Dandelion Pesto
<p>Dandelion greens are a unique and resilient leafy green in terms of their nutrient density and healing aspects (their roots are best known for the latter, but dandelion tea is quite delightful and works towards the same effect). They sometimes get a bad rap for their bitterness and coarse texture, as some peoples’ palettes are used to milder greens such as spinach and other baby greens in general. This recipe is something we stumbled upon a while back when we had an abundance of dandelion greens and inability to fit them all into salads and marinaras! Dandelion greens work great for pesto, because the slight bitterness of the leaves blend with the mild, familiar, and comforting flavor of olive oil and the sharp flavor of the cheese to create a strong, but not overwhelming, delicious treat! Wonderful for dipping or spreading on toast!</p>

Dark Rum Mojito with Basil
<p>All Ingredients: <br />
1 large lime – cut in 1/2″ pieces<br />
8 large mint leaves<br />
4 large basil leaves<br />
2 teaspoons organic sugar<br />
3 oz (8.9 cl) dark rum<br />
club soda or sparkling water<br />
fresh mint and lime slices as garnish</p>
<p>Step 1: Place the lime, mint, basil, and sugar in a mixing glass. Using a muddler, crush the ingredients until the sugar has dissolved and the lime has released its juice. Top with ice cubes and rum. Shake vigorously until very cold.</p>
<p>Step 2: Fill 2 tumblers with ice. Strain the mixture into the glasses. Top with a little club soda or sparkling water. Garnish with a mint leaf and lime slice. Serve immediately.</p>

Duck Egg Mayonnaise
<p>A thick, rich and creamy mayonnaise made with a duck egg yolk. And yes, It’s Paleo. You can substitute 1 large chicken egg yolk but will miss out on the incredible flavor and amazing thickness the duck egg gives. Macadamia nut oil is the preferred oil.</p>
<p>If you want yours European style with olive oil, do not use all extra virgin olive oil in this or else you will end up with a bitter tasting mayonnaise. If you want this to be olive oil flavored mix in a teaspoon of extra virgin olive oil with avocado oil. This also makes a little over a cup.</p>
<p>If you don’t want to do the whisked version you can try a much easier <a href="https://www.youtube.com/watch?feature=player_embedded&v=GbPF_rLpd9o">alternative with an immersion blender</a>, just be sure to use the same ingredients from my recipe and put in all the ingredients at the beginning.</p>

Easy Vietnamese Basic Dipping Sauce

Fall Squash & Sausage Soup
<p>You will need:</p>
<p>1 medium butternut, Hubbard or other fall squash, peeled, seeded and cut into large dice<br />
2 tablespoons olive oil, plus 1 teaspoon<br />
1 tablespoon Purity butter<br />
2 large onions, cut into large dice<br />
6 cloves garlic<br />
1 cup Tennessee dry red wine<br />
8 cups chicken stock<br />
1 pound Odom’s Tennessee Pride hot sausage, crumbled<br />
1 tablespoon Worcestershire sauce<br />
1 tablespoon Big S Farms hot sauce<br />
2 teaspoons chopped fresh thyme<br />
2 teaspoons chopped fresh oregano<br />
Salt and freshly ground black pepper to taste<br />
Homemade croutons made from Bread for garnish<br />
Preheat oven to 350 degrees. Place squash on a roasting pan. Toss to coat with 2 tablespoons of olive oil and bake until tender and slightly caramelized (25-30 minutes). Heat butter in a large stockpot over medium-high heat until hot. Add onions and saute until tender and browned. Add garlic, roasted squash and wine and cook over high heat until reduced by one-half. Add stock and bring to a boil. Reduce heat to low and simmer 15 minutes.</p>
<p>Meanwhile, heat remaining teaspoon of olive oil in a saute pan over medium-high heat. Add sausage and cook until it is browned. Drain fat. Strain squash mixture through a fine sieve. Puree solids and return puree to stockpot. Stir in remaining ingredients and heat thoroughly. Ladle into individual soup bowls and garnish with homemade croutons. Yield: 6-8 servings.</p>
<p>Serve with a side salad dressed with Johnny’s Gourmet Foods salad dressing and Luzianne iced tea. For dessert, serve Mrs. Sullivan’s miniature pecan pies inverted on the plate and topped with Purity whipped cream.</p>
